2 tablespoons minced ginger
-
2 cups beef broth
-
1/2 cup soy sauce, tamari, or coconut aminos
-
1/4 cup brown sugar (or coconut sugar)
-
2 tablespoons unseasoned rice vinegar
-
2 tablespoons gochujang (fermented Korean chili paste)
-
1 tablespoon toasted sesame oil
-
2 tablespoons canola oil (or vegetable/peanut oil)
-
Salt and freshly ground black pepper, to taste
-
4 short ribs (2 1/2 to 3 pounds, bone-in, trimmed of excess fat)
-
2 tablespoons cornstarch
-
2 bunches scallions (green onions), root ends trimmed
-
2 tablespoons toasted sesame seeds
-
Kimchi (for serving)
-
Shredded carrots (for serving)
-
Cooked brown rice (for serving)
Directions:
-
Prepare the Slow Cooker:
Combine the first 9 ingredients (onion, garlic, ginger, beef broth, soy sauce, brown sugar, rice vinegar, gochujang, and sesame oil) in the slow cooker. -
Sear the Short Ribs:
Season the short ribs with salt and pepper. Heat the canola oil in a large skillet over medium-high heat. Brown the short ribs on all sides, about 2-3 minutes per side. -
Slow Cook the Ribs:
Transfer the browned short ribs to the slow cooker, placing them meat side down. Cover and cook on high for 4-6 hours or low for 8-10 hours, until the ribs are tender. -
Thicken the Sauce:
In a small bowl, combine the cornstarch with about 4 tablespoons of the cooking liquid. Stir until smooth, then pour into the slow cooker. Stir to combine and cook uncovered on high for 20 minutes, until the sauce thickens. -
Prepare the Garnishes:
While the ribs are cooking, heat 1 teaspoon of oil in a skillet and cook the scallions for 2-3 minutes until slightly softened. -
Serve:
Once the ribs are done, transfer them to serving plates. Spoon the sauce over the ribs and garnish with scallions, sesame seeds, shredded carrots, and kimchi. Serve with brown rice for a complete meal.
