If you’ve never had Hawawshi before, you’re in for something special. This Egyptian street food is made of crispy pita stuffed with a spiced meat filling and baked until golden. In this vegan version, we swap traditional meat for vegan mince, keeping all the savory, herby, and spicy flavors. It’s easy to prepare, perfect for weeknight dinners, meal prep, or sharing with friends. You can cook it in the oven or air fryer, with a satisfying crunch and warm filling.

340g vegan mince (such as Beyond Meat or Impossible)

1 onion, finely diced

1 tablespoon garlic paste (or 2 minced garlic cloves)

2 tablespoons tomato paste

1 teaspoon ground black pepper

1 teaspoon paprika

1 teaspoon coriander
-
1 teaspoon allspice

½ teaspoon ground cardamom

1 teaspoon ground cumin

½ teaspoon ground cinnamon

2 tablespoons fresh parsley, finely chopped

2 teaspoons salt

4-6 medium-sized pita bread loaves

Olive oil (for brushing)
Directions

Preheat the oven to 200°C (400°F).

In a deep bowl, mix the vegan mince, onion, garlic paste, tomato paste, spices, parsley, and salt.

Carefully open each pita bread to create a pocket. Fill each pita generously with the mince mixture, pressing gently to flatten.

Brush the stuffed pita on both sides with olive oil.

Wrap each pita in aluminum foil.

If using an air fryer, set to ‘bake/roast’ mode at 190°C (375°F) and cook for 8–10 minutes, flipping halfway through.

If using the oven, cook for 12–15 minutes, flipping halfway.

Once golden and crispy, remove and serve hot with tahini dressing.
