250g Japanese yam (white-fleshed)

2–3 tbsp sugar (adjust to taste)

90g sweet potato flour or tapioca starch

Cut the Japanese yam into thin slices and steam for about 20 minutes, or until soft.

While still warm, mash the yam with sugar until smooth.

Add sweet potato flour and mix well. Once cool enough to handle, knead into a smooth dough.

Divide the dough into small bite-sized pieces and roll each into a ball.

In a pot, heat oil over medium. Add the balls and fry for 2–3 minutes. Stir occasionally to prevent sticking.

When they float, gently press each ball down to help it puff. Continue frying another 2–3 minutes until they double in size and turn golden brown.

Remove and drain on paper towels. Enjoy plain or drizzle with honey if desired.
