Marinated Octopus (Insalata di Polpo)

Insalata di Polpo, or marinated octopus, is a traditional Italian dish that’s both flavorful and delicate. The octopus is first tenderized by dunking it in and out of boiling water, then simmered until soft. It’s marinated in a mix of olive oil, lemon juice, garlic, and fresh parsley to enhance the natural flavors of the octopus. Perfect as an appetizer, this dish can be prepared ahead of time and served cold.

Ingredients

  • 2 kg octopus, tentacles only (ask the fishmonger to clean them)

  • 1 tablespoon white vinegar

  • Extra virgin olive oil (at least ¼ cup)

  • Juice of a small lemon

  • 3-4 cloves garlic, chopped

  • ½ bunch parsley, leaves picked and chopped

  • Sea salt, to taste

Directions

  1. Prepare the Octopus:
    Wash the octopus in a large bowl or tub of water. Bring a large pot of water to a boil. Dunk the octopus in and out of the boiling water three times in quick succession to tenderize the flesh. After the final dunk, add vinegar to the water and bring it back to a boil. Simmer the octopus, covered, for about an hour or until tender (check with a fork).

  2. Cool and Prepare:
    Let the octopus cool in the water. This may take several hours. Once cooled, remove the octopus from the water and place it on a work surface. Cut off the tentacles and remove the skin, which should come off easily. Cut the tentacles into bite-sized pieces.

  3. Marinate:
    Place the octopus pieces into a ceramic bowl or container. Add olive oil, lemon juice, garlic, chopped parsley, and sea salt. Adjust the seasoning to taste. Stir well, cover, and refrigerate.

  4. Serve:
    Allow the octopus to marinate for at least 30 minutes before serving. It can keep in the fridge for up to 5 days. Remove it about 30 minutes before serving and stir well.
