Ingredients

  • 1 tbsp olive oil

  • 3 to 4 boneless chicken thighs

  • 1 tbsp butter

  • 3 garlic cloves, chopped

  • 2 tbsp all-purpose flour

  • 2 cups chicken stock (33% reduced sodium)

  • ½ cup milk

  • 1 tsp Italian seasoning

  • ½ to ¾ tsp salt (adjust to taste)

  • ¼ tsp pepper

  • ⅛ tsp red pepper flakes

  • ¼ cup heavy cream

  • 1 to 2 handfuls baby spinach

  • ¼ cup parmesan cheese (plus extra for garnish)

Directions

  1. Sear Chicken: Heat olive oil in the Instant Pot on sauté mode. Season the chicken thighs with salt and pepper. Add to the pot and cook for about 3 minutes on one side, then flip and cook for another 2 minutes. Remove the chicken and set it aside.

  2. Cook Garlic and Flour: Add butter to the same pot and sauté the garlic for 20–30 seconds. Stir in the flour and cook for about 1 minute, creating a roux.

  3. Add Liquids: Pour in the chicken stock, milk, Italian seasoning, salt, pepper, and red pepper flakes. Stir to combine.

  4. Simmer: Return the chicken to the pot. Cover and set the Instant Pot to cook on low pressure for 15 minutes. Once done, release the pressure manually.

  5. Shred Chicken: Remove the chicken, chop into bite-sized pieces, and return it to the pot.

  6. Finish Soup: Stir in heavy cream, spinach, and parmesan. Let the soup simmer for a few minutes until the spinach wilts.

  7. Serve: Ladle the soup into bowls, and garnish with additional parmesan and optional sun-dried tomatoes or croutons.
