Instant Pot Costco Copycat Egg Bites (Three Flavors!)

Ingredients

  • For base

    • 12 large eggs (or egg whites)

    • 1 ½ cups cottage cheese (preferably full-fat)

  • Mediterranean Flavor

    • 1 tsp olive oil

    • ¼ cup sun-dried tomatoes, chopped

    • 3 handfuls fresh spinach

    • ¼ cup feta cheese, crumbled

  • Denver Flavor

    • 1 tsp olive oil

    • 2 slices thick-cut ham, chopped

    • ¼ cup green bell peppers, chopped

    • ¼ cup yellow onion, chopped

    • ½ cup cheddar cheese, shredded

  • Cowboy Flavor

    • 2-3 scallions, sliced thin

    • 2 slices bacon, cooked and crumbled

    • ½ cup smoked gouda cheese, shredded

Directions

  1. Prepare Mix-Ins:

    • Mediterranean: Heat olive oil in a pan and sauté spinach, sun-dried tomatoes, and a pinch of salt. Once spinach is wilted, mix with crumbled feta cheese.

    • Denver: Sauté chopped ham, bell peppers, and onions in olive oil until vegetables soften.

    • Cowboy: Mix cooked bacon and sliced scallions.

  2. Make the Egg Base: Blend eggs and cottage cheese in a blender until smooth.

  3. Add Mix-Ins: Add the Mediterranean, Denver, or Cowboy mix-ins to the egg mixture and blend for 5-10 seconds.

  4. Cook: Pour the egg mixture into silicone egg molds, filling each well almost to the top. Cover the mold with a silicone lid and wrap tightly in foil.

  5. Steam: Place the mold in the Instant Pot with 1 cup of water. Set the Instant Pot to steam on high for 10 minutes, followed by a natural release for 10 minutes.

  6. Serve or Store: Invert the egg bites onto a plate to cool. Enjoy right away, or store in an airtight container for up to 7 days in the fridge or up to 3 months in the freezer.
