Ingredients

  • 300g glutinous rice

  • 50g roasted black sesame

  • 20g white sugar

  • 15g lard (melted, can substitute with vegetable oils)

  • Cooking oil for frying (as needed)

Directions

  1. Soak the Rice: Rinse the glutinous rice thoroughly and soak it in water for 8 to 12 hours (overnight is best). Drain the rice before cooking.

  2. Steam the Rice: Place the soaked rice in a steamer. Use chopsticks to make evenly spaced holes in the rice. Steam for 30–40 minutes, until the rice is tender and fully cooked.

  3. Prepare the Filling: Grind the roasted black sesame and white sugar into a powder using a blender. Mix the ground sesame powder with melted lard to create a smooth paste.

  4. Make the Dough: Once the rice is cooked, transfer it to a clean mat. Let it cool slightly, then knead the rice until it becomes smooth and elastic. Divide the dough into small portions (30-40g each).

  5. Assemble the Cakes: Flatten each dough portion into a bowl shape, place 10-15g of the sesame filling in the center, and seal the dough around the filling to form a ball. Flatten into a disc shape.

  6. Fry the Cakes: Heat a little oil in a frying pan over medium-low heat. Fry the rice cakes in batches, turning them to cook all sides until golden brown and crispy. This should take about 5–7 minutes.

  7. Serve: Remove the cakes from the pan and let them cool slightly. Serve warm or at room temperature.
