500g small, waxy potatoes

1 tsp fine salt

1 tbsp melted plant-based butter or vegetable oil

1/2 tsp garlic powder

1 tsp Korean chili powder (gochugaru) or crushed red chili flakes

2 small shallots, finely chopped and peeled

Juice from half a lime

8 tbsp vegan mayonnaise (such as vegan kewpie)

1-2 tbsp Korean chili paste (gochujang)

2 tsp plant-based fish sauce substitute

A handful of fresh cilantro leaves, roughly torn

A small handful of fresh chives, finely sliced

1 tsp toasted black sesame seeds (optional)
Directions

Preheat your oven to 200°C or your air fryer to 180°C.

Rinse the potatoes and boil them in salted water for 10 minutes, until soft enough to pierce with a fork. Drain and move to a mixing bowl.

Toss the boiled potatoes with melted butter, garlic powder, gochugaru, and a pinch of salt.

Lay the potatoes on a baking tray and gently press them with the flat bottom of a jar or glass to smash them slightly.

Roast the potatoes in the oven for about 20 minutes, or cook them in the air fryer for the same time, until they are golden and crispy.

While the potatoes cook, combine the chopped shallots and lime juice in a small bowl. Let it sit for 5 minutes to pickle the shallots.

In another bowl, mix the vegan mayo, gochujang, vegan fish sauce, and torn cilantro.

Once the potatoes are slightly cooled, transfer them to a serving dish. Pour half of the sauce over the potatoes, then garnish with chives and sesame seeds.
