Ingredients

  • 3 lb chuck roast, trimmed and cut into large pieces

  • 1 envelope Italian salad dressing mix

  • 8 oz pepperoncini pepper slices + splash of juice (plus extra peppers for serving)

  • 8 oz Chicago-style Giardiniera, drained (plus extra for serving)

  • 14.5 oz can beef broth

  • Provolone cheese slices

  • Buns (hoagie or your choice)

Directions

  1. Prepare the crock pot: Place the chuck roast into the bottom of a 6-quart crock pot. Sprinkle the Italian dressing mix over the roast.

  2. Add the remaining ingredients: Add the pepperoncini peppers (and splash of juice), the drained Giardiniera, and beef broth. Stir to mix and ensure the broth is underneath the roast.

  3. Slow cook: Cover the crock pot and cook on low for 9 hours, or until the beef can be easily shredded with a fork.

  4. Shred the beef: Once cooked, shred the beef with two forks, then return the meat to the crock pot and let it cook in the juices on low for an additional hour.
