Ingredients

  • 1 tablespoon coconut oil

  • 1 cup Panko breadcrumbs

  • 1 cup unsweetened shredded coconut

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 teaspoon salt (or to taste)

  • ½ teaspoon ground black pepper

  • 1 lb. large shrimp or prawns (16 pieces), peeled and deveined (tails on)

  • ¼ cup all-purpose flour

  • 2 eggs, beaten

Spicy Mayo Dipping Sauce:

  • 2 tablespoons mayonnaise

  • ½ tablespoon hot sauce (or to taste)

Directions

  1. Preheat oven to 400°F (200°C).

  2. Toast coating: In a shallow saucepan over medium heat, cook coconut oil, breadcrumbs, and shredded coconut, stirring constantly until golden brown (3–4 minutes). Mix in garlic powder, paprika, salt, and pepper. Transfer to a shallow plate and let cool.

  3. Prepare shrimp: Cut through the shell along the back with kitchen scissors, remove veins and shells (keeping tails), rinse, and pat dry.

  4. Dredge: Set up plates with flour, beaten eggs, and coconut breadcrumb mixture. Coat shrimp in flour, dip in egg, then press into coconut mixture to cover completely.

  5. Bake: Place shrimp on a parchment-lined baking sheet. Bake for 15 minutes until cooked through and golden, flipping halfway for extra crispiness.
