  • 1 butternut squash, peeled and cubed

  • 1 Granny Smith apple, peeled and chopped

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 2 tbsp oil

  • 4 cups vegetable broth

  • 1 can (14 oz) coconut milk

  • Salt and pepper, to taste

Optional Garnishes:

  • ½ Granny Smith apple, finely cubed

  • Drizzle of coconut milk

  • Toasted pumpkin seeds or hazelnuts

  • Fresh thyme leaves

  • Cracked black pepper

Directions

  1. Heat oil in a large pot over medium heat. Add onion and garlic; cook until softened (about 5 minutes).

  2. Add the squash and apple; cook for 5 more minutes, stirring occasionally.

  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer until squash is tender (about 20 minutes).

  4. Blend the soup until smooth using an immersion blender, or carefully transfer to a regular blender.

  5. Stir in coconut milk, then season with salt and pepper to taste.
