Boursin Stuffed Pickles

Ingredients

  • 6 whole dill pickles, halved lengthwise

  • 150g Boursin cheese (garlic & fine herbs flavor recommended)

  • 12 slices prosciutto (gluten-free)

  • 2 tablespoons tamed jalapenos, finely chopped

Directions

  1. Preheat the oven to 400°F (204°C). Line a baking sheet with parchment paper.

  2. Cut the pickles in half lengthwise and use a small spoon to scoop out the centers, creating a long well.

  3. Dry the inside of each pickle with a paper towel to remove any excess moisture.

  4. Finely chop the jalapenos.

  5. In a small bowl, mix the Boursin cheese and chopped jalapenos.

  6. Spoon about 2 teaspoons of the cheese mixture into the center of each pickle half, smoothing it into an even layer.

  7. Wrap a slice of prosciutto around each pickle half and tuck the ends underneath to secure.

  8. Place the wrapped pickles on the prepared baking sheet and bake for 15 minutes, or until the prosciutto is crispy and the cheese is melted.

  9. Serve warm for the best texture and flavor.
