Ingredients

  • 600–800g (1.2–1.6 lb) lamb chops (4–8, depending on size)

  • 2½ tbsp red wine vinegar

  • 1 tbsp extra virgin olive oil

  • 1 tbsp honey

  • 3 garlic cloves, minced

  • 1¼ tsp fresh rosemary, finely chopped (or 1 tsp dried rosemary)

  • ½ tsp dried thyme

  • ¾–1 tsp sea salt

  • Freshly ground black pepper, to taste

  • Oil for grilling (if required)

Directions

  1. Combine all marinade ingredients in a bowl. Stir until salt dissolves.

  2. Add the lamb chops, turning to coat them well. Cover and marinate for at least 2 hours, preferably overnight (maximum 24 hours).

  3. Preheat BBQ or skillet to medium-high heat. Brush with oil if needed.

  4. Grill lamb chops for about 3 minutes per side (for medium doneness, adjust based on thickness).

  5. Transfer to a plate, loosely cover with foil, and rest for 5 minutes.
