Prepare the Bananas: Peel the bananas and slice them into 1-inch thick rounds. Place them in a freezer-safe container or bag, spreading them out in a single layer. Freeze for at least 2-3 hours or overnight.

Blend the Base: Add the frozen banana slices and Greek yogurt to a blender or food processor. If using plain Greek yogurt, add honey or maple syrup for extra sweetness. Blend until smooth and creamy. Add vanilla extract for extra flavor if desired.
