900ml thickened cream

400g (1 ¼ cups) bought lemon curd

20 vanilla marshmallows, halved

5 (70g each) bought meringue nests

210g packet shortbread fingers

Using electric beaters, beat the thickened cream in a bowl until soft peaks form. Fold in 160g (1/2 cup) of lemon curd and three-quarters of the halved marshmallows.

Crumble 4 meringue nests and half the shortbread fingers over the cream mixture. Gently stir to combine.

Spoon one-third of the cream mixture into a 2L (8-cup) serving bowl. Drizzle with half of the remaining lemon curd, crumble 2 shortbread fingers over it, and top with half of the remaining cream mixture.

Add the remaining lemon curd, crumble 2 more shortbread fingers, and then add the remaining cream mixture.

Top with the final layer of the cream mixture. Crumble the remaining meringue nests and shortbread fingers over the top. Scatter the remaining halved marshmallows to serve.
