Cucumber Sandwiches

Ingredients

  • 8 slices white bread

  • 1 medium cucumber (about 8 oz)

  • 4 oz cream cheese (softened)

  • 2 tablespoons sour cream

  • 1 tablespoon fresh dill (chopped) or 1 tsp dried dill

  • Salt to taste

  • Pepper to taste

Directions

  1. Wash the cucumber thoroughly and slice it thinly (about 1/8 inch). Set aside.

  2. In a mixing bowl, combine the softened cream cheese, sour cream, chopped dill, salt, and pepper. Mix until smooth and creamy.

  3. Lay out the bread slices on a cutting board. Spread a thin layer of the cream cheese mixture on each slice.

  4. On four of the slices, layer the cucumber slices evenly to cover the entire surface.

  5. Place the remaining slices of bread on top to form sandwiches.

  6. Use a serrated knife to cut off the crusts, if desired, and then cut each sandwich into quarters or triangles for easy serving.

  7. Serve immediately, or chill in the fridge for up to 30 minutes before serving for a cooler treat.
