Tuna Patties

Ingredients

  • 3 cans tuna in water, drained and flaked

  • 1 small onion, finely diced

  • 1 garlic clove, minced

  • 1/3 cup chopped fresh parsley

  • 1/4 cup almond flour

  • 3 tablespoons Greek yogurt

  • 2 eggs

  • 2 teaspoons Dijon mustard

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup vegetable oil (for pan-frying)

Directions

  1. Flake the Tuna
    Drain the tuna thoroughly and place it in a bowl. Flake the tuna with your hands until it forms small pieces.

  2. Sauté the Aromatics
    Preheat some vegetable oil in a pan over medium heat. Sauté the diced onion and minced garlic until fragrant. Remove from the pan and set aside to cool.

  3. Combine Ingredients
    Add the sautéed onion and garlic to the tuna along with the parsley, almond flour, Greek yogurt, eggs, Dijon mustard, salt, and pepper. Mix until well combined.

  4. Shape and Cook the Patties
    Shape the mixture into 8 similarly sized patties. Preheat some vegetable oil in a pan over medium to medium-high heat. Pan-fry the patties, browning both sides until fully cooked. Repeat until all patties are cooked.

  5. Serve and Enjoy
    Serve the patties with your favorite side dishes or use them to make delicious sandwiches.
