Ingredients

3 tbsp butter

1 ½ lbs fresh figs, stems removed and sliced ¼” thick

½ cup brown sugar

Kosher salt, as needed

1 (14 oz) sheet puff pastry, thawed

1 tbsp olive oil

½ cup pistachios, roughly chopped

2 tbsp honey, plus more to drizzle

Flaky sea salt, as needed
Directions

Preheat the oven to 425°F. Heat a 12” cast-iron skillet over medium heat and melt the butter in it.

Add the figs and sauté for 1–2 minutes until they begin to soften. Stir in the brown sugar and a pinch of salt. Simmer for another minute to thicken the mixture.

Unfold the puff pastry on a lightly floured surface. Trim the edges to form a 10” circle and place the pastry over the figs, tucking the sides around the edges.

Bake the tarte tatin in the oven for 20 minutes, or until the pastry is puffed and golden brown.

While the tarte bakes, heat a small skillet over medium heat and add olive oil and pistachios. Toast the pistachios for a few seconds. Add honey and a pinch of salt, stirring to combine, then cook for another 30 seconds.

Once the tarte is done baking, carefully invert it onto a large cutting board. Spoon the honeyed pistachios over the top and sprinkle with flaky sea salt.

Cut into slices, drizzle with extra honey if desired, and serve warm.
