For the Tart Shell:

170g unsalted butter (softened)

120g powdered sugar

1 large egg (room temperature)

350g all-purpose flour

1/2 teaspoon salt
For the Custard Filling:

500g milk

4 large eggs

100g granulated sugar

30g cornstarch

2 teaspoons vanilla extract

60g unsalted butter (softened & cubed)
For the Whipped Cream & Topping:

200g whipping cream
-
2 tablespoons powdered sugar

1 teaspoon vanilla extract

Fresh strawberries (halved)
Directions
For the Tart Shell:

Cream butter and powdered sugar until smooth. Add the egg and mix until smooth.

Add flour and salt and mix until the dough comes together. Divide into two halves and flatten into discs.

Chill in the fridge for at least 4 hours.

Preheat the oven to 350°F (175°C). Roll out the dough and press it into a 9″ tart pan. Dock the bottom with a fork.

Freeze for 30 minutes, then line with foil and fill with pie weights or rice.

Bake for 15 minutes, remove the weights, and bake for another 15-20 minutes until golden. Cool on a wire rack.
For the Custard Filling:

Heat milk and vanilla in a pot until small bubbles appear.

Whisk eggs, sugar, cornstarch, and vanilla extract in a bowl. Slowly add hot milk while whisking to temper the eggs.

Pour the mixture back into the pot and cook until thickened. Stir in butter, then strain the custard if needed.

Let the custard cool, covering it with plastic wrap to prevent a skin from forming.
For the Whipped Cream & Topping:
